Edible insects are rich in nutrients and provide an alternative and sustainable source of food for both humans and animals. However, studies show that they can be heavily contaminated by microbes, posing a risk of producing unsafe food. This project uses genomics to analyze the microbial contamination of edible insects and develop specific detection methods to monitor pathogens and undesirable microorganisms. Farming and processing practices will be evaluated for their effectiveness. The best practices will then be implemented to improve product quality and support the Québec food industry in this competitive sector.
